• a pinch sea salt
• 1 pack biscotti to serve
• a handful of mixed nuts Brazil nuts toasted almonds and hazelnuts
• 1 bottle of Vin Santo to serve
• 3 Tbsps cocoa powder to serve
• finely grated zest from 1 clementine
• makes about 50 tsp sized truffles
• a splash of brandy
• 300 ml double cream
• a knob of unsalted butter
• 300 g good quality dark chocolate 70 cocoa solids broken into small pieces
