  • Olive oil
  • 1 x 400g tin tomatoes
  • 2/3 fresh red chillies of your choice halved and deseeded
  • Sliced red chillies and sliced garlic optional
  • Large handful of raisins
  • 2/3 smoked ancho chillies
  • 1 heaped tsp smoked paprika
  • A few fresh bay leaves
  • 285 ml apple juice
  • 8 garlic cloves finely sliced
  • A dash of red wine vinegar
  • 4 lamb shanks
  • 3/4 rosemary sprigs
  • 750 ml chicken stock or water
  • 3 medium red onions finely chopped
